Cheesy Potato Casserole - Serves 12
2 lbs. Shredded Hash Browns - Thawed
2 Cans Cream of Chicken Soup
1 Stick Melted Margarine
2 Cups Sour Cream
1/2 Cup of Chopped Onions
2 Cups Grated Cheddar Cheese
Mix together and put in a 9" x 13" pan and bake for 1 hour.

 

 

Homestead Salad

1 (20 oz.) Package Frozen Mixed      Vegetables
4 Stalks Chopped Celery

1/2 Cup Chopped Onion
1/2 Cup Chopped Green Pepper
1 Can Kidney Beans - Rinse Well

Cook mixed vegetables 2-3 minutes and mix all together.
Salad Dressing

1/2 Cup Vinegar
3/4 Cup Sugar
1 Tablespoon Flour
1 Tablespoon Mustard

Cook until thick. Pour over vegetables and let set 24 hours before serving.

 

 

Limas Smoked Sausage
1 lb. dried lima beans
6 cups of water
2 tsp. salt
2 lb. Herb Brittner's Smoked Sausage Links
1/2 cup chopped onion
1 cup ketchup

1/4 cup bean cooking liquid
1 tsp. horseradish
2 tsp. worcestershire sauce
3 T. sorghum
No-stick vegetable cooking spray
     Wash and sort beans, place in a Dutch oven or large saucepan. Cover with water. Bring to a boil and boil for 2 minutes. Remove from heat and let drain, reserving 1/4 cup liquid. Brown links in a large skillet. Set aside. Place onion in skillet and cook until tender. Add to beans, along with ketchup, liquid from beans, horseradish, worcestershire sauce and sorghum. pleace half of beans in a 2.5-quart baking dish that has been sprayed with no-stick vegetable spray. Top with half the sausage. Repeat layers. Bake in a 350 degree oven for 35 to 40 minutes. Serves 8.

 

 

Bar-B-Qued Meatballs

Meat Balls:

3 lb. Herb Brittner's Ground Beef
1 - 12 oz. can evaporated milk
2 eggs
1/2 cup chopped onion
1 cup oatmeal
1 cup cracker crumbs
1/2 tsp. garlic
1/2 tsp. pepper
2 tsp. salt
2 tsp. chili powder

Sauce:

2 cups catsup
1.2 tsp. liquid smoke
1/4 cup onion
1 cup brown sugar
1/2 tsp. garlic powder

     To make meatballs, combine all ingredients (mixture will be soft) and shpe into walnut-size balls. To make sauce, combine all ingredients and stir until sugar is dissolved. Place meatballs in 13" x 9" x 2" baking pan. Pour on the sauce. Bake at 350 degrees for 1 hour. Yields 80 meatballs.

 

 

Molasses Cookies
1 1/2 cup brown sugar
1 cup lard
2 eggs, well beaten
1/2 cup molasses
1 T. ginger
1 T. nutmeg
4 tsp. baking soda
1 cup sour cream
flour (to make a medium stiff dough)
     Cream together brown sugar and lard. Add eggs and molasses. Mix and then add spices. Dissolve soda in sour cream. Add alternately with flour. Chill dough in refrigerator overnight. Put on greased cookie sheet by spoonfuls. Bake at 350 degrees for about 10-12 minutes. This makes a softer cookie than most molasses recipes.

 

 

Saucy Baked Beans
2 strips Herb Brittner's bacon, cut in pieces
2 (1 lb.) cans baked beans in tomato sauce
1 small onion, chopped
2 T. prepared mustard
1/4 cup sorghum
1 T. brown sugar
1/4 tsp. allspice
2 tsp. worcestershire sauce
     Brown bacon lightly and drain. Combine ingredients and pour into a 1 1/2 quart casserole or 2-quart bean pot. Cover and bake in moderate oven (350 degrees) for 1.5 hours. Uncover last half hour to brown beans. Serves 8.
